Homemade Tomato Soup With Grilled Cheese Sandwich

Homemade Tomato Soup With Grilled Cheese Sandwich

Mike

I grew up on tomato soup and grilled cheese, but this version takes it to another level. Creamy, rich tomato soup with just the right kick of heat paired with a golden, buttery grilled cheese loaded with melty smoked cheddar and Gruyère. Simple. Classic. Next-level comfort food.

Tomato Soup

  • ½ stick butter
  • 1 onion, diced
  • 6 cloves garlic, minced
  • 2 (28 oz) cans San Marzano tomatoes
  • 2 tbsp fresh basil, chopped
  • 1½ tbsp Blazing Star Reaper Rub and Seasoning
  • 2 cups chicken stock
  • 1 cup heavy cream
  • ½ cup shredded Parmesan cheese

Grilled Cheese Sandwich

🔥Step-by-Step Instructions

  1. Build the Soup Base
In a large pot, melt butter over medium heat. Add diced onion and sauté until soft. Stir in minced garlic and cook until fragrant.
  2. Simmer the Soup
Add San Marzano tomatoes, fresh basil, Reaper Rub, and chicken stock. Bring to a boil, then reduce to a simmer. Cover and cook for about 30 minutes.
  3. Blend and Finish
Use an immersion blender to purée the soup until smooth. Stir in heavy cream and Parmesan cheese. Let it gently simmer while preparing the grilled cheese.
  4. Make the Grilled Cheese
In a skillet over medium heat, melt butter. Place a slice of sourdough in the pan. Add smoked cheddar and Gruyère. Sprinkle lightly with All In One Seasoning. Top with another slice of sourdough.
  5. Toast Until Golden
Flip and cook until both sides are golden brown and the cheese is fully melted.
  6. Serve
Slice the sandwich and serve hot alongside creamy tomato soup.

💡Pro Tips

  • Use San Marzano tomatoes for deeper flavor.
  • Blend carefully to avoid splatter when soup is hot.
  • Cook grilled cheese over medium heat so cheese melts before bread burns.
  • Add extra Parmesan on top of the soup before serving.
