Ingredients

For the Slaw

  • 2 cups tri-color slaw mix
  • ½ English cucumber, skin on and cut into thin matchsticks
  • 2 green onions, thinly sliced
  • 1½ tablespoons rice wine vinegar
  • 1 teaspoon Blazing Star BBQ Beef Rub

For the Pork and Tacos

  • 1 pound ground pork
  • 3 garlic cloves, minced
  • 1 tablespoon minced ginger
  • 1 tablespoon Blazing Star BBQ Beef Rub
  • 1 tablespoon soy sauce
  • 1 teaspoon rice wine vinegar
  • ⅓ cup Blazing Star BBQ Asian Bang Sauce, plus more for serving
  • About 8 small tortillas

Instructions

  1. Make the slaw. Combine the tri-color slaw mix, cucumber and green onions in a bowl. Add 1½ tablespoons rice wine vinegar and 1 teaspoon Beef Rub. Toss well and refrigerate while you cook the pork.
  2. Brown the pork. Cook the ground pork in a skillet over medium heat, breaking it apart as it cooks. Once browned and cooked through, drain off most of the grease, leaving about 1 tablespoon in the skillet.
  3. Add the garlic, ginger and seasoning. Stir the minced garlic, ginger and 1 tablespoon Beef Rub into the pork. Cook for a couple of minutes, stirring so the garlic does not burn.
  4. Glaze the pork. Add the soy sauce, 1 teaspoon rice wine vinegar and ⅓ cup Asian Bang Sauce. Stir until the pork is evenly coated. Continue cooking until the sauce thickens slightly and the edges of the pork begin to caramelize.
  5. Warm the tortillas. Heat the tortillas in a dry skillet or using your preferred method.
  6. Assemble the tacos. Fill each tortilla with the glazed pork. Drain any excess liquid from the slaw, then add it on top. Finish with another drizzle of Asian Bang Sauce and serve immediately.
