Ingredients

Creamy Salsa Verde

  • 1 28-ounce can tomatillos, drained
  • 8 ounces Hatch green chiles
  • 2 whole jalapeños
  • 1/2 onion
  • 6 cloves garlic
  • 2 avocados
  • Juice of 1 lime
  • 1 bunch fresh cilantro
  • 1/2 cup sour cream

Beef Filling

For the Tacos

  • Flour tortillas
  • Shredded Oaxaca cheese or mozzarella cheese
  • Cooking oil, as needed for the skillet

Instructions

  1. Make the creamy salsa verde. Add the tomatillos, Hatch green chiles, jalapeños, onion, garlic, avocados, lime juice, cilantro and sour cream to a blender. Blend until smooth and creamy, then set aside.
  2. Sauté the onion. Heat one tablespoon of cooking oil in a skillet over medium heat. Add the diced onion and cook until softened.
  3. Cook the ground beef. Add the ground beef and cook until completely browned, breaking it into small pieces as it cooks.
  4. Season the filling. Stir in the tomato paste and Blazing Star BBQ All In One Seasoning. Mix thoroughly and drain any excess grease if needed.
  5. Build the tacos. Place shredded Oaxaca cheese on one half of each tortilla. Add the seasoned beef and finish with another layer of cheese.
  6. Fold the tortillas. Fold each tortilla over the filling and gently press it closed.
  7. Fry until crispy. Cook the tacos in a lightly oiled skillet over medium heat for approximately 2 to 3 minutes per side, or until the tortillas are golden and crispy and the cheese has melted.
  8. Serve. Serve the crispy tacos hot with the creamy salsa verde for dipping or spooning over the top.

Tips for Crispy Beef Tacos

  • Drain excess grease from the ground beef to prevent soggy tacos.
  • Use medium heat so the cheese melts before the tortillas become too dark.
  • Press the tacos gently with a spatula to create evenly crisp surfaces.
  • A layer of cheese on both sides of the beef helps hold the filling together.
  • Do not overfill the tortillas because the filling may spill into the skillet.
  • Keep finished tacos warm on a wire rack so the bottoms remain crispy.

Frequently Asked Questions

What cheese is best for crispy beef tacos?

Oaxaca cheese melts beautifully and provides excellent flavor. Mozzarella, Monterey Jack or another good melting cheese can also be used.

Can I make the beef filling ahead of time?

Yes. Prepare the filling in advance and refrigerate it in a covered container. Reheat it before assembling and frying the tacos.

Can I use corn tortillas?

You can, but corn tortillas should be warmed first so they remain flexible and do not crack when folded.

How do I keep the tacos crispy?

Avoid excess grease in the filling and place the cooked tacos on a wire rack instead of stacking them. This allows steam to escape without softening the tortillas.

How long does the salsa verde last?

Store the creamy salsa verde in a covered container in the refrigerator and use it within three days.
