- 5 ounces shredded or grated Parmesan cheese
- 16 fluid ounces heavy whipping cream (2 cups)

🔥 Step-by-Step Instructions
-
Preheat the smoker or oven
Set your smoker or oven to 300°F.
-
Arrange and season the corn
Place all 12 frozen corn cob halves in a half-size aluminum foil pan. Sprinkle Scorpion Rub evenly over the corn, adjusting the amount to your preferred heat level.

Add the butter, cheese and cream
Distribute the butter pats over the corn. Add the Parmesan cheese, then pour the heavy whipping cream into the pan.
-
Cook uncovered
Place the pan on the smoker or in the oven and cook uncovered for 30 minutes.
-
Cover and continue cooking
Cover the pan tightly with aluminum foil and cook for another 30 minutes, or until the corn is hot and tender.
-
Finish and serve
Carefully remove the foil, keeping clear of the hot steam. Spoon the creamy sauce over the corn, then finish with another sprinkle of Scorpion Rub and chopped parsley. Serve warm with extra sauce from the pan.
💡 Pro Tips
- Arrange the corn in a single layer so every piece sits in the creamy sauce.
- Scorpion Rub brings plenty of heat. Start with less if you prefer a milder side dish, then add more at the end.
- Spoon the sauce over the corn before serving so each piece gets plenty of butter, Parmesan and seasoning.
- Use the oven option when your smoker is already full of the main course.
Frequently Asked Questions
Can I make this in the oven?
Yes! Follow the same instructions at 300°F, cooking uncovered for 30 minutes and covered for another 30 minutes.
Do I need to thaw the corn first?
No. This recipe uses frozen corn cob halves placed directly into the pan.
How spicy is this corn?
The heat depends on how much Scorpion Rub you use. The cream, butter and Parmesan give the dish a rich base, while the seasoning adds sweet heat. Adjust both the initial seasoning and finishing sprinkle to your preference.
Can I use a different Blazing Star seasoning?
Yes. For a version without the Scorpion heat, try Blazing Star All In One Seasoning.
