  • 2 (8 oz) packs cream cheese, softened
  • 12 oz shredded cheddar cheese (reserve ¼ cup for topping)
  • 6 slices cooked bacon, chopped (reserve 2 tbsp for topping)
  • 2 jalapeños, seeded and finely diced
  • 2 tbsp Blazing Star Reaper Rub
  • 12 jalapeño slices (fresh or pickled) for topping
  • Optional: Hot honey (such as Melinda’s) for drizzling

  1. Prep the pastry.
    Preheat your oven to 425°F (218°C). Cut the puff pastry sheet into 12 equal squares and press each square into a muffin tin cavity.
  2. Make the filling.
    In a large bowl, mix together the softened cream cheese, shredded cheddar (minus the reserved amount), chopped bacon (minus the reserved amount), diced jalapeños, and Reaper Rub. Stir until fully combined.
  3. Fill the pastry cups.
    Use an ice cream scoop to evenly distribute the jalapeño popper mixture into each pastry-lined muffin cup.
  4. Top and bake.
    Sprinkle the remaining cheddar cheese and bacon bits on top. Add a jalapeño slice to each. Bake for 20 minutes, or until pastry is golden and the filling is bubbling.
  5. Finish and serve.
