- 12 Roma tomatoes
- 5 jalapeños
- 1 white onion
- 6 garlic cloves
- 1 bunch of cilantro
- 2 limes
- 3 tablespoons Blazing Star Beef Rub (divided)

- Prepare the grill – Light a thin layer of coals in your charcoal grill.
- Char the vegetables – Place tomatoes, jalapeños, and onion directly over hot coals. Grill until skins are blistered and charred, rotating for even cooking. Add garlic cloves halfway through to prevent burning.
- Cool and peel – Let the tomatoes cool slightly, then remove the skins.
- Blend in batches – In 3 batches, add to a blender:
- 4 Roma tomatoes
- 2 jalapeños
- ⅓ onion
- 2 garlic cloves
- ⅓ bunch cilantro
- Juice of ½ lime

Pulse blend to your desired consistency (chunky or smooth).
- Finish the salsa – Repeat blending with remaining ingredients.
