These lamb ribs are hands down some of the best ribs I’ve ever had. I cooked them for the first time at BBQ Jackpot and immediately fell in love. Hung over live fire on a drum smoker, seasoned simply with Blazing Star Beef Rub, and finished with butter and hot honey, these ribs came out plump, juicy, and packed with rich, smoky flavor. One bite and you’ll understand why lamb ribs deserve more spotlight.

Season the ribs.
Pat the lamb ribs dry and season generously on all sides with Blazing Star Beef Rub. -
Set up the drum smoker.
Light lump charcoal and add cherry wood. Bring the drum smoker up to 275°F. -
Hang and smoke.
Hang the lamb ribs over the fire and cook at 275°F. Rotate the ribs every 45 minutes for even cooking. -
Wrap for tenderness.
After about 2 hours, remove the ribs and wrap them tightly with butter and hot honey. -
Finish the cook.
Return the wrapped ribs to the smoker for another 45 minutes, until plump, juicy, and tender. -
Rest and slice.
Let the ribs rest briefly, then slice and serve hot.
