  1. Prep the rolls
    Slice bolillo rolls in half lengthwise and hollow out the center to create “boats.” Line each with Oaxaca cheese.
  2. Add the bratwurst
    Flatten bratwurst meat and spread evenly inside each roll. Sprinkle with Beef Rub.
  3. Grill or griddle
    Place the boats bratwurst-side down on a hot grill, griddle, or skillet. Cook until the sausage is browned and fully cooked through. Flip briefly to toast the bread side and melt the cheese.
  4. Fry the eggs
    In a separate pan, cook eggs over easy. Season lightly with All-In-One Seasoning.
  5. Assemble & serve
