🛒 Ingredients
- 4 bolillo rolls
- 4 uncooked bratwurst, casings removed
- 1 cup Oaxaca cheese, sliced
- 4 eggs
- 1 tbsp Blazing Star Beef Rub
- 1 tsp Blazing Star All-In-One Seasoning
- Bear & Burton’s Breakfast Sauce Too

🛒 Instructions

Prep the rolls
Slice bolillo rolls in half lengthwise and hollow out the center to create “boats.” Line each with Oaxaca cheese. -
Add the bratwurst
Flatten bratwurst meat and spread evenly inside each roll. Sprinkle with Beef Rub. -
Grill or griddle
Place the boats bratwurst-side down on a hot grill, griddle, or skillet. Cook until the sausage is browned and fully cooked through. Flip briefly to toast the bread side and melt the cheese. -
Fry the eggs
In a separate pan, cook eggs over easy. Season lightly with All-In-One Seasoning. -
Assemble & serve
Place one egg on top of each bratwurst boat. Drizzle with Bear & Burton’s Breakfast Sauce Too and Melinda’s Mexicana Sauce before serving.
