📝Ingredients

  • 1 lb (approximately 20-30 count) raw shrimp, peeled and deveined
  • Andouille sausage, sliced into ½ inch pieces
  • Olive oil
  • Blazing Star Scorpion Rub 
  • Wooden skewers, soaked (to prevent burning)
  • 1 tbsp butter 
  • ¼ cup Melinda’s Hot Honey 
  • (Optional) Extra pinch of Blazing Star Scorpion Rub for glaze

Instructions

  1. Soak the skewers: Place wooden skewers in water for 20–30 minutes ahead of grilling to reduce risk of burning.
  2. Assemble skewers: Thread a shrimp onto the skewer, then slide a slice of andouille sausage to pin the shrimp so it holds in place. Alternate shrimp and sausage pieces until skewers are full. 
  3. Oil & season: Brush or coat each assembled skewer with olive oil, then generously season with Blazing Star Scorpion Rub.
  4. Grill: Over hot coals (or medium-high grill), cook skewers for a few minutes per side. Watch closely, shrimp cooks fast.
  5. Make glaze: While skewers grill, melt butter and mix with Melinda’s Hot Honey and a teaspoon of Scorpion Rub in a small saucepan or small bowl. 
  6. Drizzle & finish: Once skewers are off the grill, drizzle or brush the hot honey butter glaze over the skewers while still warm. 
  7. Serve immediately: Plate the skewers and serve while hot for best flavor.

  • Don’t overcook the shrimp, grill just until opaque and pink, about 2–3 minutes per side depending on size.
  • Use large shrimp (20–30 count) so they don’t dry out too quickly.
