For the Chicken:

  • 2 whole serrano peppers
  • 1 bunch fresh cilantro (stems trimmed)
  • 3 cloves garlic
  • Juice of 1 lime
  • 1 tbsp Blazing Star Reaper Rub
  • 2 tbsp extra virgin olive oil
  • ¼ cup mayonnaise
  • 2 tbsp sour cream
  • ¼ cup grated parmesan cheese

For the Tacos:

  • 8 small tortillas
  • 1 cup diced cucumber
  • 1 cup halved cherry tomatoes
  • Extra grated parmesan, for garnish

🔥Instructions

  1. Prep and Season the Chicken
    Pat chicken thighs dry with paper towels. Coat both sides evenly with Blazing Star Reaper Rub.
  2. Grill the Chicken
    Set up your charcoal grill for indirect heat. Cook chicken at 375°F until it reaches 165°F internal temperature. Move over direct heat for 1–2 minutes per side to get a nice char.
  3. Make the Aji Verde Sauce
     In a blender, combine serrano peppers, cilantro, garlic, lime juice, Beef Rub, olive oil, mayonnaise, sour cream, and parmesan. Blend until smooth and creamy.
  4. Prep the Toppings
     Dice cucumbers and halve cherry tomatoes. Set aside.
  5. Build the Tacos
     Toast tortillas on the grill. Slice the rested chicken, layer on tortillas, add cucumbers, tomatoes, a drizzle of Aji Verde sauce, and a sprinkle of parmesan.
  6. Serve and Enjoy
