Ingredients
- 4 large russet potatoes, peeled and cooked until fork-tender
- 1/2 pound bacon, cooked and chopped
- 3/4 cup mayonnaise
- 1/2 cup sour cream
- 2 tablespoons Melinda’s Jalapeño Ranch Sauce
- 1/2 cup diced onion
- 1 fresh jalapeño, finely diced
- 2 tablespoons pickled jalapeños, chopped
- 1/2 cup shredded cheddar cheese
- 1 tablespoon Blazing Star BBQ Beef Rub
Instructions
- Prepare the potatoes and bacon. Cut the cooked potatoes into bite-size pieces. Cook the bacon until crisp, chop it, and divide it into two equal portions.
- Make the creamy dressing. In a large bowl, combine the mayonnaise, sour cream, Melinda’s Jalapeño Ranch Sauce, and Blazing Star BBQ Beef Rub.
- Add the mix-ins. Add the diced onion, fresh jalapeño, pickled jalapeños, shredded cheddar cheese, and half of the chopped bacon.
- Add the potatoes. Add the cooked potatoes and gently mix until everything is evenly coated.
- Chill and serve. Cover and refrigerate for at least 1 hour. Top with the remaining chopped bacon before serving.
