- 4 large russet potatoes, peeled and precooked
- ½ lb bacon, cooked and chopped
- ¾ cup mayonnaise
- ½ cup sour cream

- ½ cup diced onion
- 1 fresh jalapeño, finely diced
- 2 tbsp pickled jalapeños, chopped
- ½ cup shredded cheddar cheese
- 1 tbsp Blazing Star Beef Rub
- Salt and pepper, to taste

Cook potatoes until fork-tender, then cool and cut into bite-size chunks.
Cook bacon until crisp and set aside. -
Mix the Dressing
In a large bowl, combine mayonnaise, sour cream, Melinda’s Jalapeño Ranch Sauce, and Blazing Star Beef Rub. -
Add the Flavor
Stir in diced onion, fresh and pickled jalapeños, shredded cheese, and half of the chopped bacon. -
